Can I get an amen? No? Well, you’re probably right. As an adult, it would be a bad decision for me to eat an entire piece of sugar laden cake with zero nutritional value for breakfast. But if it’s wrong, then why does it feel so right? On the other hand, it would be a very good decision for me to eat a huge plate of spinach and beets first thing in the morning, but that also feels somehow wrong. For those of us caught somewhere between a salad and some cake, somewhere between a child and adulthood, I give you the Red Velvet Cake Smoothie. A smoothie is basically a salad that gets completely transformed when you put it in the blender with frozen fruit and a tasty liquid of your choice. This Red Velvet Cake Smoothie is the ultimate confection to indulge both your inner child and your adult brain. It combines all the richness and flavor of a red velvet cake, the cold and creamy deliciousness of a milkshake, and the nutrition and fiber of a salad. You can’t lose.
Let’s make a cake!
Just kidding. There’s no baking involved here. Nobody’s got time for that. Instead, let’s take your blender, and fill it up with ripe bananas, dates, spinach, half a beet, walnuts, cocoa powder, vanilla, and almond milk. Give it a whirl on high and voila. Cake is served. Thank me later. I’m too busy being an adult and like, organizing my calendar and cleaning the baseboards.
Since we’re being so mature and adulty, let’s take a minute to discuss the nutritional value of this rich dessert/breakfast/lunch/dinner/snack. I plugged the ingredients into Cronometer.com (which is a handy free website that lets you track your nutrition and make sure your getting everything your body needs) and was blown away by the results! - 2 ripe bananas, peeled
- ½ medium beet, scrubbed and roughly chopped
- ½ cup walnut pieces
- 4-6 pitted dates, depending on how sweet you want it
- 1 cup fresh packed spinach
- ¼ cup unsweetened cocoa powder
- 1 tsp pure vanilla extract
- 1½ cups nondairy milk such as almond, rice, or coconut
- 2 cups ice
- finely chopped dark chocolate
- finely chopped walnuts
- coconut flakes
- Add all ingredients to a blender in the order they are listed above. Blend using your blender's frozen drink or smoothie setting, or if your blender does not have this setting, simply blend on high until smooth, scraping down sides as needed. Garnish and serve!
