Not everything in life is easy. Commuting, decision making, even breakfast can sometimes be harder and more time-consuming than we wish it was. So here’s a little gift from us, something sweet and easy to start your day with: a warm bowl of creamy pumpkin oatmeal that’s delicately spiced, maple syrup sweetened, and ready to enjoy in 5 minutes or less. My hope is that when you make your first bowl of 5-Minute Pumpkin Spice Oatmeal, you’re left with a valuable little chunk of extra time (that you would usually spend preparing breakfast) to really savor. You could use it to read, plan your day, reflect on the positive things and people in your life, or simply sip a cup of tea and breathe in the moment. Sometimes a few minutes are all you need to slow down and get reacquainted with yourself outside of the daily routine.
I think you’re really going to love this oatmeal. I do. Casey does too. It’s unanimous. When I first came up with the recipe, I thought it was way too simple to have it’s own blog post. Then I was like… Who wouldn’t want a recipe for super quick and easy pumpkin oatmeal? I don’t want to know the answer to that question. Thus, 5-Minute Pumpkin Spice Oatmeal came into the world. And it was good.
In other blog related news, Casey and I have stumbled onto a new way of collaborating on posts which we LOVE. In the past, we always wrote separate recipes and posts, and I fell way behind on my posts when my husband and I moved into our first house last Spring. It’s a fixer-upper/constant work in progress, so I don’t currently have an area in my home that has good lighting for photography. So I’ve started coming up with recipes and sending them to Casey so that he can test it and take amazing photos (He’s so talented!), and then I just write the post! I am seriously loving working together like this! He shot the GORGEOUS photos in this post.

Pin Our Pumpkin Spice Oatmeal
- ½ cup old fashioned oats
- ¾ cup almond milk
- ½ cup unsweetened canned pumpkin
- pinch salt
- ½ tsp cinnamon
- ⅛th tsp ground ginger powder
- ⅛th tsp nutmeg
- 2 Tbsp maple syrup
- pumpkin seeds
- chia seeds
- sliced banana
- chocolate chips
- brown sugar
- In a bowl, mix together all ingredients except toppings and microwave for 3 minutes.
- Let cool for 1-2 minutes, add your favorite toppings, and enjoy!
