This will be a short post, but I had to share this recipe with you all. It has snowed. Minneapolis is covered in white, and at the moment it’s not all the pretty because it’s kind of snowing and kind of raining, and some of it has melted and refrozen. When the snow comes, so do a flurry of soup recipes. I threw together this red lentil and veggie soup last night with no intention of it going on the blog, but it’s so good and so comforting that I knew you guys would love it. It is full of mixed veggies, red lentils, veggie broth, and some spices. Pair it with a grilled sandwich or your favorite crackers and you’ll be set!

- 1 cup red lentils, rinsed
- 4 cups veggie broth
- 2 cups shredded kale
- 3 cups mixed veggies
- 2 tbsp nutritional yeast
- ½ tbsp minced garlic
- 1 tsp salt
- Add everything into a large pot, stir, and bring to a bowl.
- Let simmer for 15 minutes after and serve!
