Hello friends! We are finally somewhat on schedule! Zach, my husband, is wonderful cook and this is one of my favorite dishes he’s made. When we first moved to Minnesota, Alix visited about a year into that and we had a lot of fun eating at all the places in Minneapolis, exploring the city, and enjoying each other’s company. One night we went out and drank a little too much and were massively hung over the next day. Zach made us this delicious and Easy Vegan Congee. Congee is a Chinese rice porridge that will fill you up, envelop you with subtle and familiar flavors, and make you oh so happy. It sometimes called jook, but no matter what you call it, it is oh so tasty.
It’s all in the add ins
Congee has a fairly subtle flavor, but you can make it your own with a host of toppings. In the photos here, we have peas, crushes peanuts, cilantro, nori, and hot chili oil, but you can add many more things likes cooked mushrooms, mock duck, tofu, tempeh, green onions, and more! It’s a great dinner to share with friends since you can make it what you want with all the options! If you make our easy vegan congee, let us know how you like it!
Vegan Whole Foods Grocery Haul

PIN OUR EASY VEGAN CONGEE
- 1 cup of rice
- 5 quarts of water
- 4 vegetable bouillon cubes or more according to taste
- Green onions
- Mock duck
- Soy sauce
- Sesame oil
- Toasted sesame seeds
- Bring water and rice to a boil, add bouillon cubes, adjust for taste.
- Reduce heat to low and simmer for two hours or until the rice has broken down and becomes a porridge consistency.
- Serve in bowls and add any of the above toppings you like or more.
- Holds in the fridge for one week at least.
