Well, hello friends. It has been awhile! First things first – where have we been? I have been working full time at J. Selby’s running social media, their website, and working Front of House. Alix has been working hard as Venus for the Dixie Derby Girls and being a Doula! We are somewhat back and we are very ready to impress! We’ve been busy cooking, too, but we just haven’t had the time to document it, but we finally have something to share: Easy Chili Pizza.
Chili has always been one of my favorite foods. Growing up I loved chili with a grilled cheese dipped in it. It was and still is one of my favorite foods and easily reminds me of growing up in a home with my mom, sisters, and grandma. My family is pretty large. I have 5 siblings, my mom was the youngest of 7, and I grew up with a ton of cousins. While I don’t keep in touch as much now, I still enjoy thinking back to when life was simple as a kid with no bills, no jobs, and lots of delicious food that was cooked for you.
One thing I remember doing as a kid with my little sister, Becky, is making really weird food combinations. I remember making “Chip Salad” which was doritos crunched up in a bowl covered in ranch dressing – disgusting. We also ate a lot of ice cream in the summer mixed with peanut butter – delicious – and watched bad talk shows like Sally Raphael and Jenny Jones (who apparently has her own cooking blog/YouTube channel).
Recently I wanted chili, but hello, it’s been in the 80s here in Minneapolis, so I knew that was not going to happen. Then, I got to thinking and decided to replicate those flavors on a pizza. Fresh corn and bell peppers are an absolute must. There is just something so satisfying about the crunch of fresh veggies. I opted for pickled jalapenos because I love the flavor they have and they aren’t nearly as spicy as fresh. Black beans give it some bulk and when you season them, they bake to perfection. I added a homemade ranch on top because it’s delicious and looks awesome on top.
We hope to be back posting at least once a week now that we are slowly getting back into the swing of things. I hope y’all enjoy this pizza. We did. Before I took photos, I couldn’t even wait and that might be why a piece is missing…

- 1 large pizza crust
- ½ c diced yellow pepper
- ½ c fresh corn
- ½ c pickled jalapenos
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chili powder
- ½ cup black beans
- ⅓ cup marinara sauce
- sour cream or ranch for topping (optional)
- Preheat the oven to 400 F.
- Dice your peppers and get the corn off the cob.
- Mix your black beans with the spices.
- Cover the pizza in a thin layer of sauce and then top with veggies and black beans.
- Bake for 10-15 minutes or until the crust is crispy.
- Top with ranch or sour cream.
