- 2 slices of bread
- two pieces of vegan cheese
- ¼ cup kim chi
- 2 tbsp oil or vegan butter for frying
- spinach (optional)
- vegan mayo (optional)
- Slather one piece of bread in mayo and add one piece of cheese, then the spinach then the kimchi and then the last piece of cheese.
- Melt the butter a pan on medium heat and grill the sandwich until golden brown on each side.
- Serve and enjoy!
